Spiced Cauliflower Rice/Couscous

I’ve heard this described as cauliflower rice, but I think it looks more like couscous personally, but whatever you call it, it’s a tasty low carb option to rice or potatoes. For two portions I used the following;

  1. Half a small head of cauliflower
  2. Half a teaspoon of the following; smoked paprika, cumin and coriander
  3. One teaspoon of liquid smoke (optional)
  4. Salt and black pepper to taste

I chopped the cauliflower in a food processor, but you could grate it too, do whatever is easiest.

Then heat a teaspoon of vegan margarine in a frying pan over a medium heat. Add in the cauliflower and spices, give it a good stir to make sure everything is mixed well.

After around eight minutes the cauliflower was cooked, it really didn’t take long at all. I served it with vegan five bean chilli, recipe here

This was the first time I’d tried cauliflower rice and I thought it turned out really well. Adding the spices added a lot of flavour and frying it added a lovely savoury nuttiness, I will definitely be having this again.
