Vegan Tofu Scramble

This is a simple tofu scramble recipe, it’s also really easy to switch up the vegetables to suit your own taste but I used the following;

  1. 100g tofu, mashed and mixed with two tablespoons of non-dairy milk
  2. One clove of garlic, minced
  3. Four white mushrooms, diced
  4. One tomato, diced
  5. One spring onion, sliced
  6. Herbs, I used half a teaspoon of tarragon, basil and oregano
  7. A quarter of a teaspoon of turmeric, and the same of smoked paprika
  8. A handful of baby spinach
  9. Salt and black pepper to taste

Start by heating a little oil in a frying pan over a medium heat and fry the garlic for a couple of minutes. Add in the tomato, mushrooms, spring onion, herbs and spices and cook for another ten minutes. Then you can add the tofu and spinach, you only really want to wilt the spinach so it’ll only take a couple of minutes or so.

I really like tofu like this, the vegetables give it a great savoury flavour and it’s ready in minutes. I served this with toasted wholemeal bread, but it would be great in a breakfast burrito too, check out my recipe for that here. (I realise that the toast probably looks burned in places, and that’s because it practically is, I just like toast that way.)
