🍽️Gorgeous roast dinner that my brother and sister in law made at their new house, featuring @this.uk chicken thighs

🍒 These cookies are filled with crunchy almond butter and cherries, then finished with a layer of icing and half a glacé cherry on top

🥧They’re a fun twist on a traditional cherry bakewell tart, easy to make

🔖 Save this post for the next time you fancy a sweet treat

For the cookies you'll need

175g toasted flaked almonds
70g glacé cherries, chopped
70g golden syrup
100g plain flour
Half a teaspoon of almond essence

For the decoration you'll need

Four whole glacé cherries, each sliced in half
75g icing sugar
One tablespoon of ice cold water

Method

Start by adding 140g of the almonds into a high speed blender and pulse blend until the nuts are completely smooth
Roughly chop the remaining 35g of almonds and then stir them through the blended almonds
Take the 70g of glacé cherries and chop them into small pieces
Add the crunchy almond butter into a small mixing bowl, then add the chopped cherries, plain flour and golden syrup, mix until a dough forms
Now you should be able to form the dough into one large ball with your hands
Divide the ball of dough into eight equal pieces. Roll each piece into a ball and then press the dough flat into a cookie shape. Place the cookies onto a lined baking tray
Bake at 180°C/160°C fan assisted for 8-10 minutes,then set aside to cool. Give the cookies five minutes to cool and firm up before transferring them to a cooling tray
Once the cookies are completely cool, add the icing sugar into a small mixing bowl. Add the cold water and then mix until completely smooth
Spoon the icing sugar onto the cookies and then top each with half a glacé cherry. Give the cookies a couple of hours for the icing to set 💚

This whipped tofu feta is dairy-free, vegan, high in protein and a good course of both iron and calcium 🦴

It’s rich and creamy and would be ideal on sandwiches, wraps, or you can use the tofu as dip with crisps, breadsticks or veggie sticks 🥕

Meals on Reels Episode 3 Hazelnut Butter Cups 🌰 T Meals on Reels Episode 3 Hazelnut Butter Cups 🌰

These chocolate nutty treats are perfect for a little sweet snack 🍫

I made these with homemade hazelnut butter, but they’d work with any smooth nut butter 🥜

A tip for melting the chocolate 🔥
I like to use a microwave because it’s easy and simple, BUT, don’t heat it on high power for any longer than 10 second bursts. Then remove the chocolate from the chocolate and give it a stir before returning it to the microwave again

If you can alter the power, heat it on low or medium for 30 seconds or so at a time, then give it a stir and carry on heating

How Do I Know When It’s Melted? It’s important to stop heating once there are only a few small lumps of chocolate left. The residual heat from the bowl will easily melt the rest, and then you’ll not overheat the chocolate

You’ll need

125g smooth hazelnut butter
30g icing (powdered) sugar
360g dark chocolate
12 cupcake cases
A cupcake tray

Method

Start by lining a cup cake tray with the cases
Then in a small bowl mix the pistachio butter and the icing sugar together until you have a smooth creamy filling
In a separate small bowl, melt 180g of chocolate. I did this by melting the chocolate in a microwave on half powder at 30 second intervals, then taking the bowl out of the microwave and stirring the chocolate each time
Add one tablespoon of chocolate into the bottom of each cupcake case
Once the chocolate has set, top each piece with some of the hazelnut butter filling and then smooth it out into an even layer. I weighed the whole lot and the weighed out equal 12ths of the mixture
Finally melt the remaining chocolate and add one tablespoon of melted chocolate onto the filling to fully seal each cup
Leave to set and then store in a cool place, or the fridge if room temp is too warm

Food from this week 🍽️ The first 7 pictures are f Food from this week 🍽️

The first 7 pictures are from a food festival that was in Welshpool last weekend.

🫔We had spring rolls (picture 2)
🍚Fried rice (3)
🍜Noodles with vegetables (4)
🫘We also had mixed beans and veg with rice from a Moroccan stall(5) 
🍛Chana masala and saag aloo from an Indian stall (6)
🫒Then I got a mixture of olives and sun-dried tomatoes (7) from a Mediterranean delicacies stall

🥔When the heat wave was over I made a spicy bolognese and ate some as a jacket potato filling (8)

🍞Stuffed picnic loaf (9). Recipe coming soon

🧀I made whipped feta cheese out of marinated tofu (10) that I blended with yoghurt (11) until it was creamy and smooth. Recipe coming soon

🫑Roasted red pepper pesto before it was blended (12) and then stirred through some cooked pasta (13). Recipe coming soon

Now I'm currently trying to keep cool through the current heatwave 🥵 I hope you're managing to stay as  cool and comfortable as possible 💚

.Meals On Reels Episode 2; Chocolate & Hazelnut Sw .Meals On Reels Episode 2; Chocolate & Hazelnut Swirls 🌀

This time I’m sharing my recipe for these little treats. Flaky, golden puff pastry filled with chocolate and peanut spread, and chopped roasted hazelnuts 🌰

These are seriously moreish, simple and straight forward to make, and they go perfectly with a cuppa ☕

I’ll pop the recipe below if you’d like to give them a go 💚

You’ll need
320g pre-rolled puff pastry
4 tablespoons of chocolate spread, there are a few vegan friendly ones out there now so use your favourite
50g hazelnuts, roughly chopped
A couple of tablespoons of dairy-free milk to glaze the pastry with

Method
Allow the pastry to come to room temperature before unrolling
Spread the chocolate spread on the pastry in one even layer
Top with the hazelnuts in another even layer
Carefully roll the pastry into a loose tube, don’t roll it too tightly as the pastry will need room to puff while they bake
Slice the pastry into 12 equal pieces and then shape them into circles
Place them onto a lined baking tray and then brush the outsides of the pastry with the milk
Bake at 200°C for 15 minutes, or until golden

This roasted tomato pasta sauce is flavoured with sweet cherry tomatoes, red onion and garlic 🧄

It’s ideal for a midweek meal as the air fryer, or oven, does most of the work for you

Then all you have to do is blend everything together until smooth, and stir it through cooked pasta 🍝

.Meals On Reels; Choc Chip Pecan Butter Cookies 🍪 .Meals On Reels; Choc Chip Pecan Butter Cookies 🍪

This series of Meals On Reels will focus on a selection of sweet treats that are simple, easy to make, and taste amazing

These cookies…you HAVE to try them out. They’re sweet, nutty, chocolatey, and easy to make

The combination of pecan butter along with the chocolate creates a truly decadent cookie 🍫

Also, they’re 100% vegan too, of course 🌱

Here’s what you’ll need to make them

100g plain flour
150g pecan butter
90g golden syrup
100g dairy-free chocolate chunks
A pinch of salt; optional

Method

Add everything into a bowl and mix to combine. Carry on mixing until you have a dough that you can form into one large ball
Divide the ball into 8 equal pieces and roll each of them into a small ball, then squash it flat into a cookie shape
Place the cookies onto a lined baking tray, then bake at 180°C for 10 minutes
Once baked, leave them to cool for 10 minutes before transferring to a cooling tray
Once they've been cooling for a while, top each cookie with a pinch of flaked salt, this really makes the flavours POP

Tip; you can replace the pecan butter with any other nut or seed butter if pecans aren’t your thing 💚
