These nutty chocolate chunk cookies are free from nuts, gluten, egg and dairy, but they’re certainly not lacking in flavour! They’re chewy and soft, with a lovely nutty flavour, and filled with dark chocolate chunks. They’re also really easy to make, as they contain just five ingredients
Yield; 6-8 cookies Cook time; 8-10 minutes
You’ll need;
- 100g plain gluten free flour
- 90g golden syrup, you can substitute this for other syrups (like maple or agave for example) if preferred
- 90g dairy free chocolate, chopped
- 150g tahini
- A pinch of salt
Method;
- Start by adding all the ingredients into a large mixing bowl
- Use a wooden spoon to mix everything together until well combined
- Once everything is incorporated you should be able to roll the dough into a large ball with your hands, without anything sticking to your hands
- At this point equally divide the dough into between six to eight pieces. Take each piece, roll it into a small ball using your palms, then give it a good squash. The cookies won’t spread much while baking, so you’ll have to shape them before you bake them. Now you can pop them onto a baking tray lined with baking paper
- Bake the cookies at 180°C/160°C fan assisted/350°F for 8-10 minutes, or until they’re golden
- Leave them to cool for ten minutes on the baking tray before transferring them to a cooling tray. If you try to transfer them as soon as they’re finished baking, they will fall apart
