This is a truly indulgent, yet simple dessert to make, that combines dairy-free dark chocolate, dairy-free milk chocolate, icing sugar, and silken tofu along with a pinch of salt. Silken tofu is available from most supermarkets, I’ve found it’s usually in the shelf stable part of the World Foods section (here in the UK at least). I used a mixture of dark and milk chocolate for this, namely Moser Roth Vegan Dark Chocolate and Galaxy Vegan Classic. The Moser Roth bar is available from Aldi and the Galaxy bar is available from Tesco, ASDA, Sainsbury’s and Morrisons

Yield: Six servings Prep time: 10 minutes, plus three hours to chill
You’ll need:
- One 300g pack of silken tofu
- 100g dairy-free dark chocolate
- 100g dairy-free milk chocolate
- Three tablespoons of icing sugar
- A pinch of salt
Optional: Crushed biscuits and finely grated chocolate to decorate
Method:
- Start by removing the silken tofu from the pack, and drain away any water. Add the silken tofu into a blender/food processor, then add the icing sugar, and a pinch of salt into the blender

- Next, melt the chocolate using either a microwave or a double boiler, being careful not to overheat the chocolate. Once all of the chocolate has melted, add it into the blender/food processor

- Blend the mixture until it’s completely smooth and fully combined. Pour the mixture into six dishes and leave to set in the fridge for at least three hours
