Chocolate Hazelnut Mousse

This rich, decadent dairy-free mousse is incredibly easy to whip up, and contains just five ingredients. Silken tofu is such a versatile ingredients, and provides a perfect creamy base for this simple vegan dessert. Another plus is you don’t need a high speed blender to whip this up, a regular blender or handheld/stick blender will do perfectly fine

Serves; Five to seven Prep time; Ten minutes, plus chilling overnight

You’ll need;

  1. 200g dairy-free chocolate, melted
  2. 300g silken tofu
  3. 50g peanut butter
  4. 100g roasted chopped hazelnuts
  5. Two tablespoons of golden syrup
  6. A pinch of salt

Method;

  • Begin by melting the chocolate. I did this by popping it into a microwave safe jug and microwaving on half power until melted. Be sure to remove the jug from the microwave every now and then, and give the chocolate a really good stir
  • Once the chocolate is fully melted, add the silken tofu and blend it with a blender until it’s fully combined
  • Next, add the peanut butter, nuts, golden syrup and a pinch of salt. Use a spoon to mix everything together until well combined
  • Spoon the mix into between 5-7 dishes and then pop them in the fridge to set
  • Leave them to chill overnight. When you want to eat them, allow them to come to room temperature for 30 minutes before serving

I also topped them with some extra chocolate shavings, but that’s totally optional
