I’m taking you back to Britain in the 1980’s. Pub grub was booming, and this dish started hitting the menus of many pubs across the UK. Not this particular dish, of course, this is my veganised version. But it combines all the elements of the original. A plant-based chicken breast fillet, wrapped in plant-based bacon, topped with barbecue sauce and melted dairy-free cheese. Served with chips and peas it’s a British comfort food classic. I really get a kick out of veganising traditional British foods, that usually don’t appear to be very vegan friendly at all, so this definitely was a fun one for me
Serves; Two Cook time; 10-12 minutes
You’ll need;
- 140g barbecue sauce, see below for how I make mine
- Two plant-based chicken breast fillets, I used ones by The Vegetarian Butcher
- Six rashers of plant-based bacon, I used meat-free bacon by Richmond
- 40g grated dairy-free cheese, I used Cheddarton by Violife
Method;
- Simply wrap three rashers of bacon around each chicken fillet and cook for two minutes less than the cooking time stated on the pack. I found it easiest to air-fry them. Make sure to tuck the ends of the bacon underneath the chicken fillet so that nothing unravels as it cooks

- Two minutes before they’re done, take them out, pour over the sauce

- Then scatter over the grated cheese

- Then carry on cooking for another two minutes
- Once cooked, serve with chips and peas, this is in keeping with true British pub grub fashion

If you’d like to make your own barbecue sauce, this is how I made mine
Easy Vegan Barbecue Sauce
You’ll need;
- 75g ketchup
- 15g golden syrup
- 15g mild/American mustard
- 20g dark brown sugar
- 15ml/One tablespoon of cider vinegar
Method;
- All you need to do is add everything into a small saucepan over a low heat. Once it’s warmed through and the sugar has dissolved it’s ready to use
This amount will yield roughly 140g of barbecue sauce, so it’s all you need for this recipe. I found that I preferred making the sauce this way than buying ready-made sauce, but please feel free to buy ready-made if that’s the preferred option for whatever reason
