Cashew Butter White Choc Chip Vanilla Cookies

These simple cookies are really easy to make, don’t need any strange egg replacers, and contain only six ingredients. You can’t beat that with a stick!

Yield; Six cookies Cook time; 8-10 minutes

You’ll need;

  1. 100g/3.5oz plain flour
  2. 150g/5oz cashew butter
  3. 90g/3oz golden syrup
  4. 90g/3oz white chocolate chips
  5. One teaspoon of vanilla extract
  6. A pinch of salt

Method;

  • Add all the ingredients into a large mixing bowl and mix well to combine. Once the mixture is fully combined you should be able to form it into a ball using your hands
  • Split the dough into 6-8 equal sized pieces. Roll each piece into a ball, then press each ball down and form into a cookie shape. Lay the cookies onto a lined baking tray and refrigerate for 20 minutes (refriegeration is optional, it’s just something I always do)
  • Bake the cookies for 8-10 minutes at 180°C/160°C fan assisted/350°F
  • Once baked remove from the oven, then leave them to cool for 5 minutes before transferring them to a cooling tray
