Vegan Coconut Chocolate Bars

This is my vegan friendly, four ingredient version of a Bounty. Really easy to make, and equipment wise you only need a fridge and a microwave. I used my coconut ice as the filling for this. When I veganised that childhood favourite, it dawned on me how similar it is to the middle of a Bounty. So this recipe began from that one

You’ll need;

  1. One 320g/11oz tin of coconut condensed milk
  2. 350g12oz icing sugar
  3. 320g/11oz desiccated coconut
  4. 360g/12.6oz dairy free chocolate

Method; 

  • Sift the icing sugar into a large mixing bowl, then add in the coconut and mix to combine
  • Pour over the condensed milk and use a wooden spoon to mix it through the sugar and coconut. The mixture will become very stiff, but keep mixing until it’s fully combined
  • Then line a baking dish with baking paper and add the coconut mixture into to. I used a dish that was 8.5×6.5 inches/22x16cm. Use your hands to firmly press the mixture down. Then pop it into the fridge and chill for three hours
  • Take out the coconut ice out of the fridge, then slice into bars. Make them however big or small you like
  • Melt the chocolate in short 10 second bursts in a microwave (removing and stirring after each 10 seconds) until it’s melted
  • Dip each coconut bar into the chocolate, letting the excess run off. I found it was easier to do this in two steps (coating half a bar at a time, then going back to coat the other half). But you can do whatever works for you
  • Then once the chocolate has set they’re ready to eat. I like to leave them at room temperature for a bit, then pop them in the fridge to fully cool down

  1. Thanks – I’ll start sharing them! I wanted to ask you if you have any good recipes that use jackfruit rather than meat. There is a place here in town that has a bar-b-que sandwich that’s made out of jackfruit rather than pulled pork (it tastes really similar). I would love to know how to make something like that!
