Vegan Chorizo, Chicken & Butter Bean Stew

A hearty, tomato based stew with pieces of mock chicken, chorizo and butter beans. You can serve this with rice, couscous, baked potatoes or simply with some slices of crusty bread. I was inspired to make this after recently buying some Squeaky Bean cooking chorizo, so I wanted to try it out for a recipe. I thought it worked wonderfully for this, so I’d definitely recommend giving it a try if you can

Yield: Four servings Cook time: 45 minutes

You’ll need:

  1. One tablespoon of oil
  2. One brown onion, finely diced
  3. Two sticks of celery, finely diced
  4. One small carrot, finely diced
  5. Three cloves of garlic, minced
  6. Spice mix; Two teaspoons of smoked paprika, one teaspoon of ground cumin, one teaspoon of chilli powder, one teaspoon of parsley, half a teaspoon of ground nutmeg
  7. 300g mock chicken, chopped into pieces
  8. 100g meat free chorizo, chopped. I used Squeaky Bean cooking chorizo, which is available from most supermarkets
  9. Two 400g tins of plum tomatoes
  10. 200ml water
  11. 300g cooked butter beans
  12. Two tablespoons of sriracha, or similar hot sauce
  13. Salt and black pepper to taste

Method:

  • Start by heating the oil in a large frying pan over a medium heat. Once it’s warmed up, add in the onion, celery and carrot and cook for ten minutes
  • Next, add in the spice mix and cook for a couple of minutes before adding in the mock chicken, chorizo and garlic. Let everything cook for another five minutes
  • Now add in the tomatoes, water and sriracha and give everything a good stir. I blended the tomatoes to get a smoother sauce, but this is just personal preference
  • Season to taste with salt and black pepper, then pop a lid on the frying pan. Reduce the heat to low and let it simmer for 20 minutes
  • Finally, add the butter beans and stir them through, replace the lid and allow them to heat through for ten minutes before serving
