A hearty, tomato based stew with pieces of mock chicken, chorizo and butter beans. You can serve this with rice, couscous, baked potatoes or simply with some slices of crusty bread. I was inspired to make this after recently buying some Squeaky Bean cooking chorizo, so I wanted to try it out for a recipe. I thought it worked wonderfully for this, so I’d definitely recommend giving it a try if you can
Yield: Four servings Cook time: 45 minutes
You’ll need:
- One tablespoon of oil
- One brown onion, finely diced
- Two sticks of celery, finely diced
- One small carrot, finely diced
- Three cloves of garlic, minced
- Spice mix; Two teaspoons of smoked paprika, one teaspoon of ground cumin, one teaspoon of chilli powder, one teaspoon of parsley, half a teaspoon of ground nutmeg
- 300g mock chicken, chopped into pieces
- 100g meat free chorizo, chopped. I used Squeaky Bean cooking chorizo, which is available from most supermarkets
- Two 400g tins of plum tomatoes
- 200ml water
- 300g cooked butter beans
- Two tablespoons of sriracha, or similar hot sauce
- Salt and black pepper to taste
Method:
- Start by heating the oil in a large frying pan over a medium heat. Once it’s warmed up, add in the onion, celery and carrot and cook for ten minutes

- Next, add in the spice mix and cook for a couple of minutes before adding in the mock chicken, chorizo and garlic. Let everything cook for another five minutes

- Now add in the tomatoes, water and sriracha and give everything a good stir. I blended the tomatoes to get a smoother sauce, but this is just personal preference
- Season to taste with salt and black pepper, then pop a lid on the frying pan. Reduce the heat to low and let it simmer for 20 minutes
- Finally, add the butter beans and stir them through, replace the lid and allow them to heat through for ten minutes before serving
