Three Vegan Toasties

Today I’m sharing three easy to make, delicious vegan toasties. There’s a houmous and slowly roasted vegetable toastie, a classic cheese toastie with a crispy cheese crust, and finally a pepperoni pizza toastie. All meat-free, dairy-free and perfect for lunch. You can eat these by themselves, or pair them with a bowl of soup for a more filling meal

Houmous and Vegetable Toastie

Start by roasting the vegetables, this amount of vegetables should be enough to make at least four sandwiches with

You’ll need:

  1. One medium sized courgette, chopped
  2. One small aubergine, chopped
  3. Two tomatoes, chopped
  4. Half a teaspoon of Italian seasoning
  5. One quarter of a teaspoon of garlic granules
  6. One quarter of a teaspoon of onion granules
  7. One tablespoon of oil
  8. A pinch of salt and black pepper

Method:

  • Add the chopped vegetables into a dish, then sprinkle over the Italian seasoning,  garlic granules and onion granules. Drizzle the oil over the top and then gentle mix until evenly distributed
  • Roast the vegetables at 180°C/160°C fan assisted for 25 minutes, stirring halfway through. Allow the vegetables to cool to room temperature before making the toasties

To make one toastie, you’ll need:

  1. Two pieces of bread, I like to use wholemeal bread for this
  2. One tablespoon of dairy-free butter, margarine or egg-free mayonnaise
  3. Two tablespoons of houmous
  4. One quarter of the roasted vegetable mixture

Method:

  • Spread the butter/margarine/mayonnaise on the outsides of the bread, the side that will come into direct contact with the frying pan
  • Then evenly spread half the houmous onto the inside of each piece of bread, and sandwich the roasted vegetables between them
  • Heat a frying pan up to a medium heat, then place the sandwich into the pan. Fry for four or five minutes on each side, or until the bread is golden brown
  • Once toasted, remove from the pan, slice and serve

The houmous pairs perfectly with the flavours in the roasted vegetables and makes for a very tasty sandwich. This would be a perfect option for someone who isn’t terribly keen on dairy-free cheese or mock meats

Ultimate Vegan Cheese Toastie, with a Crispy Cheese Crust

To make one toastie, you’ll need:

  1. One tablespoon of dairy-free butter, margarine, or egg-free mayonnaise
  2. Two pieces of bread, I find thick white bread works well for this
  3. Two slices of dairy-free cheese, I like using two 25g slices of Cathedral City Plant-Based Cheese which is available from most supermarkets
  4. 15g dairy-free cheese, finely grated, again I used Cathedral City Plant-Based cheese
  5. A pinch of salt

Method:

  • Butter the outsides of the bread with the butter/margarine/mayonnaise, then place the sliced cheese between the bread. Sprinkle half the grated cheese onto each buttered side of the bread, then press the cheese down into the butter. Season the grated cheese with a pinch of salt on each side
  • Heat a frying pan to a medium heat, then once that’s warmed up, place the sandwich into it, making sure the grated cheese is in direct contact with the pan
  • Fry for four or five minutes on each side, or until the cheese inside has melted, and the cheese outside is crispy. The second side may cook a little quicker than the first, so be sure to keep your eye on it
  • Once toasted, remove from the pan, then slice and serve

I really like pairing this one with a comforting bowl of tomato soup. The soup is perfect for dipping the sandwich into

 

Pepperoni Pizza Toastie

To make one toastie, you’ll need:

  1. One tablespoon of dairy-free butter, margarine, or egg-free mayonnaise
  2. Two slices of bread, I find thick white bread works well for this
  3. 25g vegan meat-free pepperoni, I used Quorn Pepperoni which is available from Tesco, ASDA, Sainsbury’s and Morrisons
  4. Two black olives, sliced
  5. Pickled jalapenos, to taste
  6. Two slices of dairy-free cheese, I used two 25g slices of Cathedral city plant-based cheese
  7. One and a half tablespoons of pizza sauce

Method:

  • Spread the butter/margarine/mayonnaise onto the outsides of the bread, then spread the pizza sauce on the inside of the bread. Then add a pieces of cheese followed by the pepperoni, olives, jalapeno, and finally the second slice of bread
  • Heat a frying pan to a medium heat, then once it’s warmed up, place the sandwich into the pan. Fry for four or five minutes on each side, or until the toastie is golden brown on each side, and the cheese has melted
  • Once toasted, remove from the pan, then slice and serve

I really enjoy this sandwich, it’s the perfect blend of a toastie and a pizza, and is ideal for lunch
