Roasted Tomato & Cheese Sauce

This tasty pasta sauce combines slowly roasted tomatoes, vegetables and dairy-free cheese. It’s perfect when paired with pasta, or add cooked vegetables and mock meats if preferred. You can serve this with a fresh green salad, or crusty bread to soak up any leftover sauce

Serves; Four Cook time; 35-45 minutes

You’ll need;

  1. 1kg fresh tomatoes, sliced in half
  2. Two tablespoons of neutral oil
  3. One medium sized (roughly 165g) red onion
  4. One stick of celery
  5. Two cloves of garlic, minced
  6. One teaspoon of Italian herb mix
  7. 75g dairy-free cheese
  8. Two tablespoons of nutritional yeast
  9. Salt and black pepper to taste

Method;

  • Begin by roasting the tomatoes. Simply slice each tomato in half and place them into a suitable roasting dish. I chose to roast the tomatoes in the air-fryer, but you can roast them in an oven too. Drizzle one tablespoon of oil over the tomatoes and season then with a pinch of salt and black pepper
  • Roast the tomatoes at 220°C/200°C fan assisted for 30 minutes. Once they’re baked, leave them to cool to room temperature before removing and discarding the skins
  • While the tomatoes are cooling, work on the rest of the sauce. Heat the remaining oil in a large frying pan over a medium heat. Add in the onion and celery and season with a pinch of salt. Fry for ten minutes, or until the onion and celery begin to soften
  • Next add in the garlic and stir it through the vegetables. Give it a minute or two to cook and become fragrant
  • Place the tomatoes into a jug or blender, and then blend them until they’re smooth. Once they’re smooth add them into the frying pan with the vegetables
  • Season the tomatoes with the Italian herb mix, salt and black pepper, then leave them to simmer for 15 or 20 minutes, sitting every now and then
  • Finally add in the cheese and nutritional yeast and stir them through. Once the cheese has melted and the sauce has thickened it’s ready to use, simply stir it through cooked pasta and then serve. Top the pasta with fresh basil or dairy-free hard Italian style cheese
