@meatlessfarm & @theorchardpig kindly sent me this package to make some porkie burgers with apple & chilli jam #gifted This was the first I'd tried the meatless farm sausages and really like them. I like all their range, especially the mince Making the apple chilli jam was fun too. It went really well with the burger. Tofu "Egg" Mayo - Really easy to make, a great sandwich filling or jacket potato topping. It also tastes just like egg, because I used black salt aka kala namak I used to love egg mayo when I was vegetarian, and didn't want to miss out on it as a vegan, so this is my vegan version I'll pop the recipe below, if you'd like to try it out. I've also included pictures of the steps, to swipe ➡️ to see those 💚 You'll need 1️⃣1 400g-ish (14oz) pack of firm tofu, drained and patted dry. I used firm tofu by @cauldronfoods 2️⃣3 tablespoons egg free mayo, I used vegan mayo by @hellmannsuk 3️⃣1 teaspoon mustard, I used dijon this time 4️⃣1 small punnet of cress 5️⃣2 sticks of celery, finely chopped, this is optional 6️⃣About a quarter to a half a teaspoon of ground turmeric 7️⃣Black salt to taste Method 1️⃣Roughly chop one third of the tofu, pop it into a food processor with the mayo, mustard and turmeric. Blend until fully combined 2️⃣Add the cress & celery (if using) into a mixing bowl, and the blended tofu mixture you just made 3️⃣Chop the remaining tofu into small pieces, this will resemble cooked egg white. Seitan - Easy, cheap vegan mock meat. Make 700g/1lb10oz for around £2! It's much cheaper than buying seitan. I use seitan for mincemeat, beef style pieces (great in pies/stews/curry) sandwich slices, vegan doner kebab meat, vegan steak, all sorts I'll pop my recipe below, let me know if you give it a try 🙂💚 You'll need 1️⃣200g vital wheat gluten 2️⃣40g chickpea flour 3️⃣30g nutritional yeast 4️⃣1 tablespoon of the following - dried basil, dried oregano, onion powder, garlic powder, smoked paprika 5️⃣300ml boiled water 6️⃣1 tablespoon of tomato puree and fish free Worcester sauce Method Mix together the dry ingredients into a large mixing bowl. Next, mix the wet ingredients into a jug Then mix the wet ingredients into the dry, and mix until a dough forms, now it's ready to knead Knead for 3-5 minutes, the dough should be wet, but shouldn't stick to your hands, if it does add a sprinkle of vital wheat gluten Once you're ready to cook, bring a large pan of water to a boil Wrap the dough in foil, food safe cling film, or cheesecloth, tie the ends securely Place the wrapped dough into the pan of water, immediately reduce the heat to low, pop the lid on and cook for 1 hour Easy, cheap, homemade mock meat ° ° ° ° ° #seitan #recipe #mockmeat #wheatmeat #howto #veganrecipe #vitalwheatgluten #chickpeaflour #nutritionalyeast #seitanrecipe #veganfoods #bethanysvegankitchen

Until Greggs make a vegan cheese & onion pasty (please greggs that would be epic!) I thought I'd share how I make them. They consist of dairy free cheese, diced onion & potato in flaky golden pastry. I adored these when I was vegetarian, so I veganised them 💚 To make 6 large pasties you’ll need 500g/17.5oz of puff pastry 200g/7oz cheese, grated I used mature cheddar alternative by ASDA 1 small brown onion, diced 1 medium potato, peeled & diced - dice the veg into quite small, uniform pieces 1 teaspoon of dried parsley Salt & pepper to taste A few tablespoons of unsweetened non-dairy milk A few tablespoons of plain, all purpose flour Method Take the pastry out of the fridge and allow it to come to room temperature Add the cheese, onion, potato and parsley into a mixing bowl Season to taste with salt and black pepper (I used about half a teaspoon of salt and plenty black pepper) then fold together to combine Using rolling pin and a sharp knife, roll and divide the pastry into 6 rectangles, make sure to keep the working surface and rolling pin well floured Add the pastry onto two lined baking trays, put the filling onto one side of the pastry and apply milk to the edges Fold the pastry over the filling and press the edges closed. then go over the edges with a fork to ensure it’s properly sealed Brush the pasties with more milk and cut slits in the top, this will allow steam to escape. Hot chocolate stirrers - Easy vegan hot chocolate, use for your hot chocolate, or give them as little handmade gifts. They're easy to make, you just need chocolate, spoons & an ice cube tray You'll need One 180g/7oz ish bar of chocolate, I used Bournville Ice cube tray Wooden spoons, I bought mine from ebay Method Break the chocolate into squares, then pop it into a microwave safe bowl. Microwave in 10 second bursts, removing the bowl and stirring each time, until just melted Spoon the chocolate into the ice cube tray, tap the tray to remove air bubbles Leave the chocolate to cool for a minute or two before putting the spoons in Once the chocolate is at room temperature, pop it into the fridge Once set, remove the chocolate from the tray If you're giving them as gifts, pop them into small paper/card boxes (buy online or from craft shops) you just want to cut a slit in the bottom of the box, slide it over the spoon, then fold the bottom closed, covering the chocolate Then stir them through a cup of hot plant milk, top with cream or marshmallows 💚 ° ° ° ° ° #chocolate #hotchocolate #veganchocolate #chocolatestirrers #hotchoc #vegan #dairyfree #drink #soyamilk #homemade #easyrecipe #vegansofig #plantbased #bethanysvegankitchen
