Yield; Two servings Cook time; 10-15 minutes

You’ll need;

  1. Two large pitta bread
  2. One teaspoon of oil
  3. Two peppers, sliced
  4. 150g/5oz seitan (or mock meat) thinly sliced
  5. Spice mix; half a teaspoon of the following; smoked paprika, ground cumin, ground coriander, chilli powder
  6. One tablespoon of tomato puree

Method;

  • Add the oil into a frying pan over a medium heat. Pop in the peppers and give them five minutes to soften, sitring occasionally
  • Then add in the spice mix, season with salt and black pepper, and add the seitan and tomato puree. Cover with a lid and give it another five minutes or so to cook, again stirring occasionally
