Get yourself some seitan, peppers, spices and pittas, then abra-kebab-ra tasty vegan kebabs. Sorry about the terrible pun, I just like bad jokes. I used my seitan recipe for this, but other mock meats will work too. If you want to make seitan with my recipe, just CLICK HERE
Yield; Two servings Cook time; 10-15 minutes
You’ll need;
- Two large pitta bread
- One teaspoon of oil
- Two peppers, sliced
- 150g/5oz seitan (or mock meat) thinly sliced
- Spice mix; half a teaspoon of the following; smoked paprika, ground cumin, ground coriander, chilli powder
- One tablespoon of tomato puree
Method;
- Add the oil into a frying pan over a medium heat. Pop in the peppers and give them five minutes to soften, sitring occasionally
- Then add in the spice mix, season with salt and black pepper, and add the seitan and tomato puree. Cover with a lid and give it another five minutes or so to cook, again stirring occasionally
- Lightly toast the pittas in a toaster until they start to puff up a little. Then remove them from the toaster and carefully slice them open
- Spoon the seitan and pepper mixture into the pitta, top with chilli or garlic sauce, then serve
