9 Vegan Lunch Ideas

Over on My Instagram I got a few questions about vegan lunches, so I thought I’d put together a list of back to school lunch ideas. Or back to work, or uni, or just if you want some lunch ideas. Most of these can be prepared and sit in the fridge for a few days. Pasta or couscous salad is great for this, and with the sandwiches you can prepare the filling beforehand, keep it in the fridge, and use as needed

Chickpea Sandwich Filling

Chickpea Sandwich Filling this mixture of smashed chickpeas, sweetcorn, spring onion, celery and egg free mayo is great for sandwiches. Chickpeas are a good source of protein, cheap, and this sandwich filling is really quick to prepare

Vegan Coronation Chicken

Easy Vegan Coronation Chicken If you enjoy mock meats then this might be for you. This is my veganised version of the British classic, it consists of mock chicken, herbs, spices and mayonnaise. It’s another one that you can keep in the fridge and use as needed

Vegan Cheese & Onion Sandwich Filler

Vegan Cheese & Onion Sandwich Filler This one can be eaten hot or cold. Just use your favourite cheese, along with some red onion, mayo and seasonings. This would be good for fellow vegan cheese lovers like myself

Pasta Salad with a Creamy Houmous Dressing This is great for keeping in the fridge and taking a serving with you for lunch each day. I didn’t add any mock meat or dairy free cheese to this, but feel free to add those if you like

Wholewheat Couscous Salad

Whole Wheat Couscous & Chickpea Salad I added shredded carrot, spinach, diced peppers and chickpeas to this, it makes for a tasty lunch. As always you can swap out the veggies if they’re not for you, and again feel free to add in other things if you like

Creamy Vegan “Chicken” Pasta Salad

Chicken & Sweetcorn Pasta Salad  This recipe actually came from something my partner used to do with chicken leftovers. He would shred the chicken, add cooked pasta, spring onion and sweetcorn to make this salad. So I veganised it. My partner isn’t vegan, but he eats vegan food at home (as we don’t have animals products in our home). If you like mock meats you might like this one

Seitan

Seitan (Wheat gluten mock meat) The best sandwich filling of all (in my opinion) seitan! It’s a great source of protein, very cheap to make, and tastes great. It goes very well with any other sandwich fillings you fancy, tomato, cucumber, lettuce, spring onion, cheese etc anything you like. I like seitan so much I make it every Sunday

Easy Vegan Puff Pastry Pizza

Puff Pastry Pizza Very easy to make, just pop a slice into a lunch box for a quick lunch.  You can choose to customise the toppings to suit your taste. If you think olives are evil, leave them off, if you’re angered by the lack of pineapple, add some to yours

Vegan Egg Salad

Vegan Egg Salad Now, fair warning, this really does smell like eggs. Some people don’t care the eggy smell, but I personally love this vegan egg salad. So if you enjoy eggs like I did, this might be the lunch for you. I used to love eggs before I went vegan, and this way to I can still enjoy one of my absolute favourite lunches. Tofu is really very similar to cooked egg in texture. So along with the mayo, cress and black salt, you can make something that is very convincing
