Vegan Beef & Broccoli Fried Rice

A quick and easy fried rice dish, with mock beef, crisp tender broccoli and fluffy rice in a savoury sauce. This can be eaten as a main or a side, and would be great for a vegan fakeaway. For the mock beef, I used my Beef Style Seitan recipe, which worked really well. However, you can also make this using shop bought mock beef if you prefer. I find the best rice to use for fried rice, is rice cooked the day before. This way it’s had time to dry out a bit, so it’s perfect for frying. You can also use cooked packet rice/microwave rice if you don’t have any cooked rice on hand. Just massage the rice in the packet to break up the grains before adding it to the frying pan

Yield; Two servings Cook time; 20 minutes

You’ll need;

  1. One teaspoon of vegetable oil
  2. One red onion, diced
  3. Half a head of broccoli, cut into small florets
  4. 150g shredded mock beef
  5. 125g thinly sliced chestnut mushrooms
  6. A handful of frozen mixed vegetables
  7. A handful of frozen edamame
  8. 250g of cooked rice

For the sauce you’ll need;

  1. Two tablespoons of soy sauce
  2. One tablespoon of toasted sesame oil
  3. Half a teaspoon of Chinese five spice
  4. One teaspoon of peanut butter
  5. One tablespoon of water

To garnish you’ll need;

  1. One spring onion, thinly sliced
  2. Half a teaspoon of sesame seeds
  3. 20g mix of peanuts and cashews, chopped
  4. A drizzle of sriracha (optional)

Method;

  • Start by heating the oil in a large frying pan over a medium high heat. Once the oil has warmed up, add in the onion and broccoli. Give them five minutes to cook, stirring now and then
  • Next, add in the mock beef. I like to push the onion and broccoli to the sides of the pan, just until the mock beef starts to heat up, then after about five minutes mix the mock beef through the onion and broccoli
  • Now add the mushrooms, frozen mixed vegetables and frozen edamame, give everything a good stir to combine. Once the frozen vegetables have heated through add in the rice
  • Next, add the sauce ingredients into a small bowl, and whisk them together. Now pour the sauce evenly over the fried rice, and give everything a good mix to ensure the sauce coats everything. Once you’re ready to serve, spoon the rice into bowls, then top with a seeds, spring onion, nuts and sriracha if using. Serve immediately

As I mentioned, I used my beef style seitan for this recipe. It worked really well and can also be finely diced and used as mince, or thinly sliced and used hot or cold in sandwiches. If you’d like to check out that recipe, it’s linked above
