This flavourful, easy to make side would go well along with stir fried vegetables, or mock meats in a Chinese curry sauce, black bean sauce or sweet and sour sauce. It’s also quick and straightforward to make. Plain boiled rice can be a little, well, plain. So this is a really simple way to give rice more flavour and make it shine. This recipe came about when I needed to jazz up some boiled rice, with ingredients I already had on hand. So I came up with this, and then re-made it so I could recreate it for a proper blog entry
Serves; Four Cook time; 15 minutes
You’ll need;
- 250g rice, this is the dry, uncooked weight. I used quick cook white rice that takes 15 minutes to cook
- Two tablespoons of toasted sesame oil
- Two tablespoons of soy sauce
- Two spring onions, thinly sliced, this comes to roughly 25g
- Half a teaspoon of each of the following; smoked paprika, onion granules, garlic granules, white sesame seeds, black sesame seeds
- Two tablespoons of water
Method;
- Cook the rice as per the instructions on the packet, the rice I was using cooked in 15 minutes. Then add the oil, soy sauce, smoked paprika, onion granules, garlic granules, white sesame seeds and black sesame seeds together in a small dish and whisk until well combined
- Thinly slice the spring onion, then add this to the bowl along with the two tablespoons of water. Whisk again to combine

- Once the rice is cooked, drain away any water and then return the rice to the pot. Drizzle the sauce over the top of the rice and then fold it through

Try pairing the rice with this sweet and sour takeaway style tofu. It would make for a perfect vegan fakeaway feast. The tofu I used in that recipe is puffed tofu, which is available from Asian supermarkets. However, pressed, pan-fried firm tofu would work just as well
