Let’s be honest, tofu needs a little bit of love to really make it shine. This crispy, herby coating adds flavour and texture to the tofu, as well as omega 3 fats, thanks to the milled flaxseed. I was kindly sent some gifted products by http://yumandyay.co.uk/ to try, their milled flaxseed makes for a brilliant breadcrumb coating, perfect to partner with tofu

You’ll need;
- One 280g/10oz pack of extra firm tofu
- A few tablespoons of plain, all purpose flour
- A splash of unsweetened plant milk
- Around four tablespoons of milled flaxseed
- One teaspoon of dried mixed herbs
- Two tablespoons of oil
Method;
- Start by draining the liquid that the tofu is packed in, then pat it dry. Slice into fairly thick pieces, I got five out of the block
- Add the flour, milk and flaxseed into three separate shallow dishes. Season the flaxseed with the herbs and a good pinch of salt and pepper, stir well to combine
- Sprinkle a little salt and black pepper onto each piece of tofu. Then dredge into the flour, then milk, and finally the seasoned flaxseed. Once all are coated, pop them onto a plate and set aside

- Heat the oil in a large frying pan over a medium heat. Lay each piece of coated tofu into the frying pan, carefully placing them away from you (that way if any oil splashes, it won’t splash towards you). Allow to cook for five minutes on each side, or until golden and crispy
- Once cooked, place onto a kitchen roll lined plate, then serve. I served mine with a simple side salad


This is going on this weeks menu… I’m always dubious about tofu, we have a sort of 5% success rate with it. Im willing to try again though!
