Last year I made a Freshers themed post Freshers Meal Ideas where I shared three easy, cheap, vegan meals. So in that same vein, I thought I’d share three easy things you can make with a humble tin of baked beans. I’ll be making chilli beans, a baked bean cottage pie, and an easy minestrone soup
Yield; Two-three servings Cook time; 25 minutes
You’ll need;
- One teaspoon of oil
- One onion, chopped
- One pepper, chopped
- One clove of garlic, minced
- One handful of frozen sweetcorn
- One teaspoon of tomato puree
- Spice mix; half a teaspoon of the following; ground cumin, ground coriander, chilli powder and smoked paprika
- One 400g/14oz tin of baked beans
- Salt and black pepper to taste
Method;
- Add the oil into a frying pan over a medium heat, pop in the onion, allow it to soften for about five minutes
- Add the peppers and garlic, give these another five to ten minutes to cook
- Then add the tomato puree, spices, sweetcorn and beans. Season to taste with a pinch of salt and black pepper, then cover with a lid and leave it to cook for another ten minutes. Serve over baked potatoes or with rice
