Easy Chilli Baked Beans

Last year I made a Freshers themed post Freshers Meal Ideas where I shared three easy, cheap, vegan meals. So in that same vein, I thought I’d share three easy things you can make with a humble tin of baked beans. I’ll be making chilli beans, a baked bean cottage pie, and an easy minestrone soup

Yield; Two-three servings Cook time; 25 minutes

You’ll need;

  1. One teaspoon of oil
  2. One onion, chopped
  3. One pepper, chopped
  4. One clove of garlic, minced
  5. One handful of frozen sweetcorn
  6. One teaspoon of tomato puree
  7. Spice mix; half a teaspoon of the following; ground cumin, ground coriander, chilli powder and smoked paprika
  8. One 400g/14oz tin of baked beans
  9. Salt and black pepper to taste

Method;

  • Add the oil into a frying pan over a medium heat, pop in the onion, allow it to soften for about five minutes
  • Add the peppers and garlic, give these another five to ten minutes to cook
  • Then add the tomato puree, spices, sweetcorn and beans. Season to taste with a pinch of salt and black pepper, then cover with a lid and leave it to cook for another ten minutes. Serve over baked potatoes or with rice
