This is a tasty sandwich filling that would also work well with salads, or as a jacket potato topping, and would be ideal if mock meats aren’t for you
You’ll need;
- One 400g/14oz tin of chickpeas, drained and rinsed
- Two – three tablespoons of egg free mayonnaise
- Three teaspoons of curry powder, I used a medium tikka masala curry powder
- Half a teaspoon of ground turmeric
- Half a teaspoon of smoked paprika
- Three tablespoons of raisins
- One tablespoon of flaked almonds
- Half a small mild brown onion, finely diced
- Salt to taste
Method;
- All you need to do is add everything into a large mixing bowl, then fold together until everything is fully combined. If you don’t like the thought of adding the raisins and almonds you can leave them out instead
- Once mixed, use a potato masher to roughly mash the mix a few times. This will just be enough to break the chickpeas down a little
- Pop the mixture in the fridge and refrigerate for 30 minutes before using
