Coronation Chickpea

This is a tasty sandwich filling that would also work well with salads, or as a jacket potato topping, and would be ideal if mock meats aren’t for you

You’ll need;

  1. One 400g/14oz tin of chickpeas, drained and rinsed
  2. Two – three tablespoons of egg free mayonnaise
  3. Three teaspoons of curry powder, I used a medium tikka masala curry powder
  4. Half a teaspoon of ground turmeric
  5. Half a teaspoon of smoked paprika
  6. Three tablespoons of raisins
  7. One tablespoon of flaked almonds
  8. Half a small mild brown onion, finely diced
  9. Salt to taste

Method;

  • All you need to do is add everything into a large mixing bowl, then fold together until everything is fully combined. If you don’t like the thought of adding the raisins and almonds you can leave them out instead
  • Once mixed, use a potato masher to roughly mash the mix a few times. This will just be enough to break the chickpeas down a little
  • Pop the mixture in the fridge and refrigerate for 30 minutes before using
