These little treats only require three ingredients, and can be whipped up in just a few minutes. I used vegan marshmallows that I bought from Holland and Barrett, rice cereal from Tesco (their free from own brand is vegan) and dairy free spread by Vitalite. They have the same flavour, and the same soft, chewy texture, with no dairy or gelatin and they’re gluten free
You’ll need;
- 30g/1oz dairy free butter, plus a little extra to grease a dish with
- 150g/5oz marshmallows
- 100g/3.5oz rice cereal
- Optional – sprinkles to decorate the top with
Method;
- Start by lightly greasing a baking dish with a little dairy free butter. Next, heat the 30g of butter in a frying pan over a medium heat, once melted add the marshmallows
- Stir the marshmallows until they melt, the mixture will become quite thick
- Add the cereal and fold them through the melted marshmallow. Once they’re fully combined, press the mixture into the dish. If you lightly grease your hands with a little butter the mix won’t stick to you. Don’t press the mixture down too firmly, we don’t want to compact the mix as then it won’t have the same soft texture once it’s set. So just gently press it down, then press in the stars, if using
- Pop the mix into the fridge for an hour to chill. When you’re ready to slice, just turn the dish upside down onto a chopping board, give it a tap and it should come right out
