More Vegan Lunch Ideas

Recently I shared someΒ Vegan Sandwich Ideas so I thought I’d share some more recipes that would be perfect for lunches. Most of these you can eat on their own, or you can pair them with sandwiches from my sandwich ideas post and mix and match. Just click or tap the title of each recipe to go it

Vegan Sausage, Cheese & Bean Melt

Starting with a sausage, cheese & bean melt. You can eat these hot or cold, and if you want to keep them for longer you can freeze them. Just wait until they’re completely cold, then freeze them in an airtight container. Then you can defrost them as needed

Roasted Pepper & Aubergine Couscous

Next a roasted pepper and aubergine couscous salad. A whole food plant based recipe that would be perfect for a packed lunch. This doesn’t contain any mock meats or dairy free cheese, as I realise those things aren’t for everyone

Vegan Sausage & Tomato Pasta Salad

Or you could try this pasta salad. This is one of my favourite lunches, you can always leave out the sausage if preferred, it’s just as good without it. This is another one that you can eat hot or cold too, I prefer eating it cold personally

Soft Cheese & Cherry Tomato Tarts

These cherry tomato and soft cheese tarts would make for a lovely lunch. Just wait until they’re cold before packing them. You can swap the tomatoes for something else if you prefer, asparagus would be a lovely option too. I love having them with a crisp green side salad

Black Eyed Bean Couscous Salad

Another couscous salad, this one has a lovely mix of textures. With the soft beans and couscous, and crisp crunchy salad vegetables. Great as a lunch on it’s own, or as a small side along with a sandwich

Garlicky Green Bean Pasta Salad

Another pasta salad, this time with garlicky green beans, cherry tomatoes and penne in a creamy dressing. The beans have a crisp tender texture giving this a lovely fresh mouthfeel

Vegan Cheese & Onion Pasties

These are lovely hot or cold, and again can be frozen. You could make a batch of them, freeze what you don’t want to eat, then defrost them as needed. Any vegan cheese that melts will work for this, I would recommend trying Violife’s Epic Mature cheese for this. You can buy it from Sainsbury’s, ASDA or Tesco

Loaded Potato Salad

This potato salad has meat free “bacon”, dairy free cheese, spring onion, peppers and tomato all in a deliciously creamy dressing. It would be ideal to have a small serving of it with a sandwich, or paired with a pasta or couscous salad. If mock meats aren’t for you, you can replace it with smoked tofu, it will create a very similar result

Finally I wanted to share a couple of sweet treats that would be ideal for a packed lunch

Vegan Rice Krispy Squares

Whip up a batch of these and then add them into your packed lunch. They’re just like the non-vegan version but don’t contain any gelatine. I used vegan marshmallows from Holland and Barrett for these

Chocolate Chip Marshmallow Cookies

Finally finishing with another marshmallow themed treat, these marshmallow stuffed chocolate chip cookies. They just require five ingredients and are pretty simple to make. Like the rice krispy squares they will last for a week, so you can make them on a Sunday ready for lunches for the following week
