Fried chicken style seitan with a crispy seasoned breadcrumb coating. I will also show you how I make smaller pieces of seitan, which would be perfect for making nuggets, fillets, burgers and meatballs

Let’s start with chicken nuggets
- I split the seitan dough in half, I made five nuggets with one half, and a fillet with the other half
- You just want to choose something to wrap the dough in, so that it won’t allow any water to get in while it cooks. I would recommend starting with food safe cling film or foil, as they’re the easiest to work with
- Place a small piece of dough on either foil or cling film, fold one half over the dough, then do the same with the other half. If you’re using cling film you can tie off the ends, if you’re using foil you can fold or twist it closed
- For the larger fillet piece, I put the dough onto a piece of cling film, then I added another piece of cling film on top. I rolled the top and bottom of the cling film to close the edges, then tied the sides into knots
- Now you can fill a saucepan to about half way with water, then bring it to a boil. Pop the wrapped dough in the water and immediately reduce the heat to low. I allowed the smaller pieces to cook for 15 minutes, and the larger fillet for around 25 minutes. Once cooked you can remove them from the water and leave them to cool
You can use this same method to make burgers or meatballs.
Vegan Fried “Chicken”
To bread your chicken you will need the following;
- Two to three tablespoons of plain flour
- Four or so tablespoons of plant milk
- Three tablespoons of breadcrumbs
- Half a teaspoon of both onion and garlic powder
- One teaspoon of smoked paprika
- One teaspoon of dried parsley
- One teaspoon of dried oregano
- Half a teaspoon of chilli powder
- A good pinch of salt
Method;
- You will need three shallow dishes. Add the flour into one dish, the milk into another, and everything else listed into the last dish. Mix the breadcrumb mixture thoroughly to ensure it’s well combined
- Take each piece of chicken and dip it into the flour, then milk, then breadcrumbs
- Once they’re breaded you can set them aside
- Heat a little oil in a large frying pan over a medium heat. Fry each piece for a few minutes on each side, or until golden and crispy
