This combines a mixture of vegetables and udon noodles, in a savoury stir fry sauce, topped with crispy fried beef. This would be especially good if you’re fancying a fakeaway. You can use any mock beef for this, there are plenty of vegan versions of steak around to choose from. I went with my homemade Beef Style Seitan, which worked perfectly for this recipe. To make the Crispy Beef Steak you’ll need;
- One meat-free steak
- Two tablespoons of plain, all purpose flour
- 50ml unsweetened dairy-free milk
- Five tablespoons of panko breadcrumbs
- A few tablespoons of oil to fry the beef in, reserve this for frying the steak after it’s been breaded
Method;
- Start by putting the flour, milk and panko breadcrumbs into three separate shallow dishes. Next, take the meat-free steaks and dredge it in the flour
- Then dip the steak into the milk, then finally the breadcrumbs. Then dip it back into the milk and finally the breadcrumbs again
- Set the steak aside and work on the rest of the recipe
For the Stir Fried Noodles & Vegetables you’ll need;
- One tablespoon of oil
- One small carrot, peeled and thinly sliced, roughly 30g
- One stick of celery, thinly sliced, roughly 30g
- Half a red pepper, thinly sliced, roughly 45g
- 200g ready to wok udon noodles
- For the sauce you’ll need; 120ml water, one tablespoon of dark soy sauce, one tablespoon of light soy sauce, one tablespoon of mushroom based stir fry sauce, one tablespoon of cornflour and finally one tablespoon of toasted sesame oil
Method;
- Heat one tablespoon of oil in a large pan over a medium heat. Once it’s warmed up, add in the carrot and celery and give them five minutes to fry
- Next, add in the red pepper and give everything five minutes to fry, stirring every now and then
- While the vegetables are cooking, heat the oil to fry the beef in a separate frying pan. Fry the beef for a few minutes on each side

- Add the noodles into the frying pan with the vegetables and then whisk together the sauce in a small bowl
- After you’ve added the noodles in the frying pan, pour over the sauce
- You should notice the sauce will begin to thicken almost immediately after adding it into the frying pan

- Once the sauce is thick and the beef is golden and crispy, serve the stir fry topped with the sliced crispy fried beef
