Easy “Chicken” Tikka Masala

I’m starting 2019 with my easy, meat and dairy free, tikka masala recipe. All you need is tikka masala curry powder, tinned tomatoes and dairy free cream to make a delicious vegan tikka sauce. You can choose to add the meat free “chicken” style strips, or just add more vegetables and chickpeas if mock meats aren’t your thing. For the dairy free cream, I used tofu cream (a blend of silken tofu and plant milk) but you can choose to use oat cream or soya cream. On to the recipe!

Yield; Four servings (approx 200kcal per serving) Cook time; 30 minutes
You’ll need;

  1. One teaspoon of oil
  2. One brown onion, sliced
  3. Two peppers, sliced
  4. 320g/11oz of mock chicken (for those in the UK, I used No Chick strips from Iceland)
  5. Four tablespoons of tikka masala curry powder
  6. One tablespoon of tomato puree
  7. One 400g/14oz tin of chopped tomatoes
  8. 150ml of dairy free cream
  9. Salt to taste

Method;

  • Add the oil into a large saucepan over a medium heat. Then add the onion and peppers, allow to cook for five minutes, stirring occasionally
  • Add the mock chicken and give it another five minutes to cook, again stirring occasionally
  • Next add the curry powder and tomato puree, give it a good mix to combine and once combined add the chopped tomato. Season to taste with salt and cover with a lid. Reduce the heat to medium low, then leave to cook for fifteen minutes, stirring every now and then
  • Finally pour in the cream and stir through to combine, give it another five minutes to cook and then serve

A note about tofu cream;Β Tofu cream is a low fat plant based alternative to dairy cream. All you have to do is use a blender to combine a box (roughly 350g) of silken tofu with either 200ml or 250ml of unsweetened plant milk. Using 200ml of milk will result in a double cream like consistency, 250ml will give you a more single cream like consistency

Refrigerate the leftover tofu cream and use it in pasta sauces, curry sauce, soups or stews. Or use it to add a creaminess to a tofu scramble, fried mushrooms or mashed potato

  1. I am in bed suffering with a stinking cold – this looks like the perfect meal to make me feel better! I am not going to be able to face the supermarket today, but when I am feeling a bit more alive, this is one I would love to try.
