Seitan Sandwich Filler

Rather than slicing seitan for sandwiches, try this tasty sandwich filler instead. This has a good mix of textures and flavours, so it’s great for adding to sandwiches and wraps, eating with salads, or as a baked potato topping. I used my Original Seitan Recipe for this, but my Chicken Style Seitan would also work well too

Yield; 375g of sandwich filler Prep time; 10 minutes

You’ll need;

  1. 150g seitan, grated
  2. Two sticks of celery, diced
  3. 60g sweetcorn
  4. Two spring onions, thinly sliced
  5. Four tablespoons of egg free mayo
  6. Half a tablespoon of mild mustard
  7. Half a teaspoon of parsley
  8. Salt to taste

Method;

  • Coarsely grate the seitan and add it into a mixing bowl. Add the celery, sweetcorn and spring onion into the mixing bowl along with the seitan
  • Then add the mayo, mustard, parsley and salt to taste and mix until well combined. Refrigerate for 15 minutes before using
  • It should keep in the fridge for around four or five days

I find having food like this in the fridge makes preparing lunch a lot quicker. It’s also handy if you want to take your lunch with you, just prepare the sandwich or wrap the night before, then it’s ready to take with you for lunch
