This dish combines rice and stir fried vegetables, with Chinese five spice, toasted sesame oil and soy sauce. To make this fried golden vegetable rice gluten free, simply swap the soy sauce for the same amount of tamari. You can eat this as a main, or as a side. I served this topped with a meat-free vegan chicken fillet. You could serve it along with these Chicken Style Tofu Fillets
This is also a good way to use up leftover rice. It works best with rice that is a day old. Simply boil your rice with vegetable stock, and half a teaspoon of ground turmeric to give it a gorgeous yellow colour. I find this makes for a really colourful and inviting fried rice dish. I tend to use easy cook long grain rice, as it cooks quickly (in 15 minutes) and is versatile. This recipe came about because I wanted to make a better version of those packets of golden vegetable rice from supermarkets. The vegetables that are in there are usually a little sad, and unfortunately few in number. So although they’re useful in a pinch, I think it’s better when you make your own
Serves; Three Cook time; 20 minutes
You’ll need;
- One small carrot, peeled and diced, roughly 50g
- Two spring onions, thinly sliced
- 150g chopped mushroom, I used chestnut mushroom
- Two handfuls of frozen peas, roughly 150g
- Two handfuls of frozen sweetcorn, roughly 150g
- 375g cooked golden rice, see above for how to cook
- For the sauce; Three tablespoons of soy sauce (or swap for three tablespoons of tamari to make this gluten free), one tablespoon of toasted sesame oil, one teaspoon of Chinese five spice
Method;
- Begin by heating a non-stick pan over a medium heat. Once it has warmed up, add in the carrot and spring onion. Give those three or four minutes to cook
- Next, add in the chopped mushroom and give those three or four minutes to cook
- Then, add the frozen vegetables and stir them through. Give everything another five minutes to cook

- Now add rice and stir it through the vegetables. Break up any clumps and give everything a really good mix

- Finally, whisk together the soy sauce (or tamari if using), sesame oil and Chinese five spice in a small dish. Once combined pour this over the vegetables and rice and give everything a good stir
- After a couple of minutes it’s ready to serve. Spoon into bowls and enjoy
