Dear tofu cream, you have vastly benefited my life since you came into it. I can't believe it took us so long to find each other, but we got there in the end and that's the main thing. I look forward to our many more food adventures. Love, Bethany Joking aside, I do really love tofu cream. Where can you buy it? You don't, you make it. Just use one block of silken tofu (the non-chilled kind in a box) and around 200-250ml unsweetened plant milk Blend together with a blender/food processor and then use in pasta dishes, curry, soups, anything you'd normally use cream in. This time I used garlic, onion, mushroom, tarragon, parsley, vegan parmesan, tofu cream and peas to make this tasty pasta dish. Would anyone like a cookie? 🍪🍫 My easy vegan cookie recipe is pretty foolproof You can use any sort of nut butter (crunchy or smooth both work) any sort of dairy free chocolate (or swap the chocolate for nuts) and if you don't have maple syrup, golden syrup works too A chunky cookie, still warm from the oven, washed down with an ice cold glass of milk, delish I hope you have a lovely week 💚 For the cookies, you'll need 150g/5oz nut butter 100g/3.5oz plain flour 90g/3oz maple syrup 90g/3oz chocolate, chopped A pinch of salt Method Mix all the ingredients together until well combined Form the dough into a ball with your hands Divide into 6-8, roll into balls and flatten, then pop them onto a lined baking tray Refrigerate for 30 minutes (optional, refrigerating solidifies fat so cookies don't spread as much) Then bake for 8-10 minutes at 180°C/350°F Leave to cool for 5 minutes, then transfer to a cooling rack ° ° ° ° ° #vegan #cooking #baking #cookie #cookies #cookiesandmilk #cookiesofinstagram #vegancookies #chocolate #chocolatechunk #chocolatechip #peanutbutter #eggfree #dairyfree #milk #soymilk #bakingcookies #sweet #snack #recipe #recipeshare #peanuts #nuts #maplesyrup #veganbaking #bethanysvegankitchen

Baked potato topped with seitan 5 bean chilli, melted cheese, sriracha mayo, fresh tomato, creme fraiche and parsley. Because everything is better when you dump a load of toppings onto it I hadn't tried the creme fraiche by Oatly before, but it's really lovely. Creamy garlic mushrooms on toast 🍄 Mince a clove of garlic, add it into a frying pan along with a teaspoon of dairy free margarine/oil over a medium heat, fry for a minute Add some chopped chestnut/cremini mushrooms (I used 5 decent sized ones) and fry for 5 minutes Next add a tablespoon or two of cream cheese, season with tarragon, parsley, salt and pepper, give it another five or so minutes to cook Then serve on hot buttered toast (I used vitalite).
