Vegan “Chicken” Korma

This is a really simple and easy way to make a tasty vegan korma. Most jarred korma sauces contain dairy products, jarred korma paste however does not. So you can make a great korma sauce with only a jar of korma paste and a tin of coconut milk. See, I told you it was simple

Yield; Four servings (365kcal per serving) Cook time; 30 minutes

You’ll need;

  1. One tablespoon of oil
  2. One brown onion, thinly sliced
  3. 300g(10.5oz) mock chicken (I used Tesco meat free chicken style pieces)
  4. A 200g(7oz) jar of korma paste
  5. A 400g(14oz) can of coconut milk

Method;

  • Add the oil into a large frying pan over a medium heat. Pop in the onion and fry for 10 minutes
  • Next, add the mock chicken and cook for 5 minutes (or replace this with sliced vegetables if mock meats aren’t your thing)
  • Then add in the korma paste and coconut milk, leave uncovered to cook and thicken for a further 15 minutes. Serve along with rice and poppadoms for a tasty vegan fakeaway
