Oven baked chips, topped with my vegan mushroom based pulled “pork”, sweet smoky peppers, Vbites cheese, diced red onion and finished with a drizzle of sriracha mayo. Meaty and cheesy, but completely plant based
For this you’ll need some vegan pulled “pork”, if you want to make my mushroom based recipe it’s HERE
Alternatively, you can use mock meat and fry it in the same way to achieve something similar
Yield; Four servings Cook time; 30 minutes
You’ll need;
- Enough chips to line a large parchment lined baking tray, I went with steak cut ones
- One large pepper, seeds removed and sliced
- One teaspoon of oil
- One quarter of a teaspoon of smoked paprika
- The pulled pork you made earlier
- Around 125g/4.5oz grated dairy free cheese
- Half a red onion, diced
- Sriracha mayo drizzle
Method;
- Prepare the vegetables before cooking the chips. The mushrooms only take 10 minutes to cook, and the peppers won’t take much longer than that either
- I fried the peppers in a teaspoon of oil until they had softened. Then sprinkle over the smoked paprika. Once cooked set them aside
- Cook the chips as per the instructions on the pack, once cooked you’re ready to assemble. Remove the chips from the oven, sprinkle a little salt and black pepper over them
- Scatter over the peppers, pulled pork, cheese, and finally the red onion. Return the chips to the oven and give them another five minutes to carry on cooking
- Once theΒ cheese has melted remove from the oven and drizzle over some sriracha mayo. Now they’re ready to serve
