Vegan Pulled “Pork”

Easy vegan pulled “pork”, just as meaty and flavourful as the pork version, but completely plant based. King oyster mushrooms don’t have much flavour alone, but they do readily take on other flavours. This along with their meaty mouthfeel, makes them perfect for vegan pulled “pork”. Eat this pulled “pork” on top of burgers, in sandwiches, or inside tacos. I bought my king oyster mushrooms from Tesco, but they sell them in Asian supermarkets too

Yield; 2-4 servings Cook time; 10 minutes

You’ll need;

  1. Four king oyster mushrooms
  2. One tablespoon of dairy free butter
  3. One teaspoon of light soy sauce
  4. Three tablespoons of barbecue sauce
  5. One tablespoon of ketchup
  6. Two tablespoons of water
  7. Half a teaspoon of smoked paprika
  8. A pinch of cayenne pepper

Method;

  • Start by shredding the mushrooms. Use a fork to shred the mushroom stems, start at the bottom and work your way to the cap. We won’t use the caps for this, but they can be used in other dishesDSC_0168-picsay.JPG
  • Melt the butter in a frying pan over a medium heat. Once melted add the shredded mushroom
  • Sprinkle over the soy sauce, paprika and cayenne pepper. Give it five minutes to cook, stirring occasionally
  • Add the sauces and water into a small dish, whisk together to combine, then add the sauce to the mushrooms

  • Give the mixture another five minutes to cook down, and allow the sauce to thicken. Once cooked remove from the heat and serve
