This can be eaten as a main or as a side dish. It would be lovely served with sweet and sour tofu and spring rolls, as a bit of a Chinese inspired fakeaway. You can use the vegetables I did, or swap them for others if you don’t like them. Also, if mock meat isn’t for you, substitute it for tofu or skip it instead
Yield; Two – Four servings Cook time; 15 minutes
You’ll need;
- One teaspoon of vegetable oil
- Two large red spring onions, finely sliced
- Two cloves of garlic, minced
- One pepper, chopped into small pieces
- One handful of frozen sweetcorn
- One handful of frozen peas
- 100g/1.7oz diced mock meat, pretty much any will work
- For the sauce, whisk together the following; Two tablespoons of light soy sauce, one tablespoon roasted sesame oil, one teaspoon of Chinese five spice, half a teaspoon of ground ginger, one tablespoon of water
- 250g/9oz cooked rice
Method;
- Add the oil into a large frying pan over a medium high heat. Next add the garlic and cook for one minute, then add the onion and pepper
- Give the vegetables a couple of minutes to soften, then add the frozen vegetables and mock meat. Give them a couple of minutes to cook through, then add the rice
- Mix the rice through the vegetable and mock meat mixture, stirring for a few minutes. Pour over the sauce and give it a good stir, once it’s heated through it’s ready to serve
Also going to have a stab at this this week. Your website has become a staple of our weekly menu by the looks of things. Ha ha ha, that’s ok. It’s really funny, I’d told my wife about your stuff before but I think she just didn’t take it in because since I showing her your healthy meal plan post you have become the go to source for at least some of our meals every week. 😄
