Mock Meat & Veg Fried Rice

This can be eaten as a main or as a side dish. It would be lovely served with sweet and sour tofu and spring rolls, as a bit of a Chinese inspired fakeaway. You can use the vegetables I did, or swap them for others if you don’t like them. Also, if mock meat isn’t for you, substitute it for tofu or skip it instead


Yield; Two – Four servings Cook time; 15 minutes

You’ll need;

  1. One teaspoon of vegetable oil
  2. Two large red spring onions, finely sliced
  3. Two cloves of garlic, minced
  4. One pepper, chopped into small pieces
  5. One handful of frozen sweetcorn
  6. One handful of frozen peas
  7. 100g/1.7oz diced mock meat, pretty much any will work
  8. For the sauce, whisk together the following; Two tablespoons of light soy sauce, one tablespoon roasted sesame oil, one teaspoon of Chinese five spice, half a teaspoon of ground ginger, one tablespoon of water
  9. 250g/9oz cooked rice


  • Add the oil into a large frying pan over a medium high heat. Next add the garlic and cook for one minute, then add the onion and pepper
  • Give the vegetables a couple of minutes to soften, then add the frozen vegetables and mock meat. Give them a couple of minutes to cook through, then add the rice
  • Mix the rice through the vegetable and mock meat mixture, stirring for a few minutes. Pour over the sauce and give it a good stir, once it’s heated through it’s ready to serve

I was telling my wife for ages she should check it out but it seems that showing her your joint weight loss/meal suggestions post was the incentive she needed. each of the meals we had worked really well! once again, thanks for doing these. : )
