Cheesy BBQ “Chicken” Baguette

A warm, white baguette, filled with barbecue flavoured mock chicken and sweetcorn, topped with melted dairy free cheese and spring onion. This would be lovely for a quick lunch

Yield; Four servings Cook time; 15 minutes

You’ll need;

  1. 190g/7oz mock chicken, I used This
  2. Four tablespoons of barbecue sauce
  3. One tablespoon of ketchup
  4. Half a teaspoon of the following; smoked paprika, onion powder, garlic powder, dried parsley
  5. One small handful of sweetcorn

Method;

  • Pan fry the mock chicken as per the instructions on the pack. Once cooked, use two forks to shred it. Then pop it into a mixing bowl along with the other ingredients and fold together. Once combined, set it aside, it should look like this

Now we can assemble the sandwiches, you’ll need;

  1. Two small baguettes (batons)
  2. Grated dairy free cheese, use as much as you like
  3. One spring onion, thinly sliced

Method;

  • Slice the bread in half, making sure to not slice completely through. Spoon half the “chicken” mix onto each baguette, then top with grated cheese to taste
  • Pop the baguettes under a warm grill for around 5 minutes or so. Once the cheese has melted it’s ready to top with spring onion and serve
