A warm, white baguette, filled with barbecue flavoured mock chicken and sweetcorn, topped with melted dairy free cheese and spring onion. This would be lovely for a quick lunch
Yield; Four servings Cook time; 15 minutes
You’ll need;
- 190g/7oz mock chicken, I used This
- Four tablespoons of barbecue sauce
- One tablespoon of ketchup
- Half a teaspoon of the following; smoked paprika, onion powder, garlic powder, dried parsley
- One small handful of sweetcorn
Method;
- Pan fry the mock chicken as per the instructions on the pack. Once cooked, use two forks to shred it. Then pop it into a mixing bowl along with the other ingredients and fold together. Once combined, set it aside, it should look like this
Now we can assemble the sandwiches, you’ll need;
- Two small baguettes (batons)
- Grated dairy free cheese, use as much as you like
- One spring onion, thinly sliced
Method;
- Slice the bread in half, making sure to not slice completely through. Spoon half the “chicken” mix onto each baguette, then top with grated cheese to taste
- Pop the baguettes under a warm grill for around 5 minutes or so. Once the cheese has melted it’s ready to top with spring onion and serve
