Simple Couscous Salad – with a creamy salad dressing

As it starts to warm up outside, I start to want to eat foods like this. Simple, colourful salads are great for quick lunches or midweek meals. They will also happily sit in the fridge for a few days, just remember to keep the dressing separate. Using vegetable stock with the couscous will give it more flavour than simply using water alone

Yield; Two servings (264kcal per serving without dressing) Cook time; Five minutes

You’ll need;

  1. 100g/3.5oz couscous
  2. 150ml hot vegetable stock
  3. 100g/3.5oz cucumber, chopped
  4. Three spring onions, thinly sliced
  5. Two large vine tomatoes, seeds removed and chopped
  6. 80g/3oz sweetcorn (I just used tinned)


  • Add the couscous and stock into a shallow dish, cover and leave for five minutes. After five minutes has elapsed, fluff the couscous with a fork and leave to cool to room temperature
  • When the couscous has cooled, add it into a mixing bowl and mix through the spring onions, cucumber and sweetcorn
  • Once it’s well mixed, add the tomatoes. The tomatoes are added last as they are more soft in texture, and this will ensure they don’t get bumped or bruised
  • Refrigerate until you’re ready to serve

Then for the dressing (there will be around 400kcal in the dressing, the number of servings this will yield will be solely down to how generous your servings are)

You’ll need;

  1. Two tablespoons of the following; oil, cider vinegar and egg free mayonnaise
  2. One teaspoon of the following; dijon mustard, dried mixed herbs and dried parsley
  3. One quarter of a teaspoon of garlic granules
  4. A pinch of salt and black pepper


  • Simply add everything into a screw top jar/container then give it a good shake. Make sure the top is on properly, otherwise you might end up wearing the dressing, we don’t want that
  • Serve the salad with the dressing drizzled on top. Store leftover dressing in an airtight container in the fridge. I would tell you how long it lasts for, but mine never sticks around longer than a week
