These are really meaty but completely vegan. For fellow people in the UK, Iceland sell vegan mock chicken that’s incredibly close to the real thing, it’s pretty eerie. After all most vegans don’t stop eating meat because they dislike it. Some of us still want those familiar flavours and textures, just without animal involvement.
You’ll need;
- 320g/11oz mock chicken
- 100ml non-dairy cream
- One heaped tablespoon of tikka masala curry powder
- One red onion, chopped
- One teaspoon of oil (only if you’re cooking in a frying pan)
Method;
- Defrost the mock chicken and allow it to come to room temperature. Then add it into a mixing bowl
- Pour over the cream and curry powder, then fold together until all the mock meat is evenly coated
- Pop in the fridge for at least half an hour for the flavours to come together
- Once you’re ready, assemble the kebabs by alternately threading the “chicken” and onion. If you’re using wooden skewers on a barbecue, soak them in water for a good 10 minutes before assembling the kebabs
- Cook over a medium heat for 5-6 minutes on all sides, then serve. If you don’t have a barbecue, cook them in a frying pan with the oil
