Biscoff & Chocolate Puff Pastry Twists - Another older recipe that I mentioned on an Instagram story yesterday. A couple of people asked for the recipe, so I thought I'd share it again incase anyone else wants to try it The best bit is you only need 3 ingredients to make these, I'm all about simple, easy vegan food Make these for #Valentines #Galentines or just because baked treats are delicious I also want to say thank you for your lovely comments on my last post, I really appreciate them Hope you have a great Thursday 💚 Biscoff & Chocolate Puff Pastry Twists - You’ll need 320g(11oz) ready made pre-rolled puff pastry Six tablespoons of biscoff spread, use crunchy or smooth, whichever you prefer 50g(1.5oz) dairy free chocolate, chopped into small pieces Method Preheat the oven to 220ºC/200ºC fan assisted/400ºF Allow the pastry to come to room temperature, then unroll it with the longest side facing you Evenly spread the Biscoff onto one half of the pastry, I've included a picture to illustrate what I mean swipe ➡️ to see that Fold one side of the pastry over the biscoff and chocolate, as if closing a book. Gently press down the pastry, then using a sharp knife, slice horizontally into ten pieces Gently twist each piece of pastry and place onto a lined baking tray. Bake for ten minutes, or until golden brown Once cooked, leave to stand for five minutes before placing onto a cooling rack. Vegan Cassoulet - I'm sharing another older recipe of mine. This is my hearty meat free version of a cassoulet, vegan sausages baked in a mixture of tomato, vegetables & white beans, topped with herby breadcrumbs If I have inadvertently butchered this French classic, please accept my humble apologies, I'm English not French. I'll pop the recipe below if you want some hearty vegan comfort food Hope you have a great Tuesday 💚 You’ll need One tablespoon of oil Three large cloves of garlic, minced One red onion, sliced Four rashers of vegan “bacon”, chopped, I used Vbites One 400g/14oz tin of chopped tomatoes Herbs, one teaspoon of each; dried oregano, dried basil, dried thyme and dried parsley Salt and black pepper to taste Two 400g/14oz tins of cannellini beans, drained and rinsed Six vegan sausages, defrosted, I used Fry’s One stale piece of bread, crusts removed, blitzed with a food processor into breadcrumbs Method Start by preheating your oven to 180ºC/350ºF Next, heat the oil in a frying pan over a medium heat. Add in the garlic and cook for one minute before adding the onion. Cook for about five minutes before adding in the vegan “bacon” pieces. Cook for a further ten minutes. Then add in the chopped tomatoes, season with the herbs, salt and black pepper, and cook for about five minutes. At this point you can remove the frying pan from the heat and mix through the beans. Place the sausages on top of the bean mixture, and press each one down a little. I’m not sure why Fry’s sausages sometimes have a line scored into them, to make them easier to slice perhaps? Who knows Sprinkle the breadcrumbs over the bean mixture, trying to avoid the sausages. Sprinkle a little more parsley over the breadcrumbs. Bake for around 40 minutes, or until the breadcrumbs are starting to brown. When I started losing weight I was determined to keep eating my favourite foods. As previously I'd cut them out completely, then ended up binging on them. So I thought rather than go down that road again, I'd try a new approach Now I still eat pizza, I just eat lower calorie versions, or eat the higher calorie ones less frequently. For example, there are 346kcal for half this pizza (I ate half) rather than 676kcak for half a Papa John's vegan pizza So making swaps like that has helped me lose weight, and I no longer binge on food, because it's still included in my diet Would you like to know more about the things I do to lose weight? It's mostly just calories in versus calories out, but I could make a blog post or something, if that would help anyone. Let me know in a comment or DM. I feel like the last vegan to try the vegan sausage roll from Greggs, but I got there in the end It's so good, sure it's salty and greasy, but it's a sausage roll, that's what sausage rolls are all about. To walk into a Greggs, and see a mostly full tray of vegan sausage rolls was a spiritual experience What did you think of it? Did you like it too?
