This time I’m sharing my recipe for these little treats. Flaky, golden puff pastry filled with chocolate and peanut spread, and chopped roasted hazelnuts 🌰

These are seriously moreish, simple and straight forward to make, and they go perfectly with a cuppa ☕

I’ll pop the recipe below if you’d like to give them a go 💚

You’ll need
320g pre-rolled puff pastry
4 tablespoons of chocolate spread, there are a few vegan friendly ones out there now so use your favourite
50g hazelnuts, roughly chopped
A couple of tablespoons of dairy-free milk to glaze the pastry with

Method
Allow the pastry to come to room temperature before unrolling
Spread the chocolate spread on the pastry in one even layer
Top with the hazelnuts in another even layer
Carefully roll the pastry into a loose tube, don’t roll it too tightly as the pastry will need room to puff while they bake
Slice the pastry into 12 equal pieces and then shape them into circles
Place them onto a lined baking tray and then brush the outsides of the pastry with the milk
Bake at 200°C for 15 minutes, or until golden

.Meals On Reels; Choc Chip Pecan Butter Cookies 🍪 .Meals On Reels; Choc Chip Pecan Butter Cookies 🍪

This series of Meals On Reels will focus on a selection of sweet treats that are simple, easy to make, and taste amazing

These cookies…you HAVE to try them out. They’re sweet, nutty, chocolatey, and easy to make

The combination of pecan butter along with the chocolate creates a truly decadent cookie 🍫

Also, they’re 100% vegan too, of course 🌱

Here’s what you’ll need to make them

100g plain flour
150g pecan butter
90g golden syrup
100g dairy-free chocolate chunks
A pinch of salt; optional

Method

Add everything into a bowl and mix to combine. Carry on mixing until you have a dough that you can form into one large ball
Divide the ball into 8 equal pieces and roll each of them into a small ball, then squash it flat into a cookie shape
Place the cookies onto a lined baking tray, then bake at 180°C for 10 minutes
Once baked, leave them to cool for 10 minutes before transferring to a cooling tray
Once they've been cooling for a while, top each cookie with a pinch of flaked salt, this really makes the flavours POP

Tip; you can replace the pecan butter with any other nut or seed butter if pecans aren’t your thing 💚

This week of scran; A bit late because I forgot wh This week of scran; A bit late because I forgot what day it was with travelling back to the UK 😅

1 First up, a cheese toastie (aka grilled cheese ) that I made with vegan Kraft cheese (that is NOT CHEESE okay, stop saying it’s cheese when it ISN’T). I just thought the NOT CHEESE was funny. It was a good toastie. Also, if a rogue piece of cheese falls into the pan, leave it, then when you flip the sandwich over, stick it onto the sandwich and the cheese will go all crispy and crunchy

2 A cheesy, meaty sandwich that Gregory and I made with @littledevilmeats and ate it in the park, it was really lovely and their mock meats were delicious

3 Eggy bread with Just Egg, I thought this was gorgeous! Just like that the egg version I used to have when I was veggie, but totally vegan

4 - 11 Amazingly delicious food from @feral.portland l! I’m grateful we got to go there again before I left because we both thoroughly enjoy their food and they’re awesome people

12 Brekkie that Gregory made with @eatjust Just Egg and @myforestfoods Vegan Bacon, it was super tasty

13 Picking raspberries from the raspberry bushes in the garden

14 - 17 Delicious Thai food from @katiportland which we ordered for a takeaway/takeout one evening and it was really lovely, especially the curry puffs

18 The first meal I made back in the UK for me and my Mom, it was seitan, vegetables and udon noodles in a chow mein sauce, really quick and convenient but definitely hit the spot

Meals On Reels Episode 6; Vegan Tuna Melt Toastie Meals On Reels Episode 6; Vegan Tuna Melt Toastie 🥪

🐟 This toastie combines fish-free @squeakybeanveg tuna
🧀 @cathedral_city_uk plant-based cheese and
🧈@vitalite dairy-free spread to make an epic toastie

You'll need

1️⃣2 slices of bread
2️⃣A little dairy-free spread
3️⃣2 slices of dairy-free cheese
4️⃣A couple of tablespoons of fish-free tuna
5️⃣A little egg-free mayo to combine

1️⃣Butter the outsides of the bread, this is the side that will come in contact with the pan
2️⃣Mix a little bit of mayo through the tuna, stir to combine
3️⃣Assemble the sandwich by adding cheese, tuna, more cheese and finally the second piece of bread
4️⃣Toast the sandwich in a frying pan on a medium heat for 3-4 minutes each side. Just keep an eye on it and check every now and then
5️⃣When it's toasted it should release easily from the pan
6️⃣Then slice and serve

🐟 You can make a pretty convincing vegan substitute for anchovies that are oily, salty, briny and fishy

🍄‍🟫You can use these in sauces to add a boost of umami, or to top toast with. Shiitake mushrooms alone already have plenty of umami flavour

🌿So after dehydrating them slightly, then rehydrating with a marinade that’s bursting with flavour, you get a tasty plant-based alternative to anchovies

Scran of late; 🍜Pictures 1+4 Iwent to @obonpdx tw Scran of late;

🍜Pictures 1+4 Iwent to @obonpdx twice, first grilled wild mushrooms & hazelnut tantan, which was chilled and refreshing. It was also my first time trying umeboshi (traditional Japanese pickled plum which are incredibly sour) it was delicious. The second time I had the tempura udon, which was absolutely delicious as always. The tempura is so light and crisp, the noodles are delicious and the broth is amazing. I also had the giant tater tots which were gorgeous too

🍳Pictures 5-6 were curried ackee scramble, ackee makes for a really delicious scramble and I'd definitely recommend giving it a try if you haven't

🥪Pictures 7-9 are from @memento.mori.cafe we went there for the first time and I had the Grim Reaper sandwich with Just Egg, cheese, sausage patty, bacon and onion aioli on sourdough bread. Gregory and a ham and cheese croissant with salad, and I had a Hell Raiser to drink

🥗Pictures 10 & 11 a chicken Caesar salad with garlic croutons and fried capers which was a super tasty special from @byeandbyeportland 

🍝And finally picture 12 was dinner I made last night. Penne in a tomato, vegetable and pepperoni sauce

Meals On Reels Episode 5; Puff Pastry Pesto Tartle Meals On Reels Episode 5; Puff Pastry Pesto Tartlets 🌱

🧑‍🍳These are simple to make
🔥/❄️Delicious hot or cold
🍅🍄🌿 Easy to customise the toppings to suit you

You'll need

1️⃣One 320g sheet of ready rolled puff pastry, most supermarkets will sell ready rolled puff pastry that is accidentally suitable for vegans, due to the use of oil as opposed to butter
2️⃣50g dairy free pesto
3️⃣50g dairy free cheese, finely grated. I used @cathedral_city_uk Cathedral City Plant Based cheese
4️⃣Six cherry tomatoes, thinly sliced
5️⃣Two spring onions, sliced
6️⃣Salt and black pepper to taste
7️⃣One tablespoon of plant milk, I used Alpro soya milk

1️⃣Start by allowing the puff pastry to come to room temperature before unrolling it. Then slice the pastry into six equal pieces. Use a sharp knife to score around the edges of the pastry. Place each piece of pastry onto a baking tray lined with baking paper

2️⃣Then divide the pesto equally onto each piece of pastry. Use the back of a teaspoon to gently spread the pesto out evenly onto the pastry

3️⃣Top the pesto with some grated cheese, tomatoes and spring onion. Finally top each tart with a pinch of salt and black pepper, and brush around the edges with a little plant milk

4️⃣Bake the tarts at 220°C/200°C fan assisted for 12-15 minutes, or until they’ve risen and the edges are golden brown. Once they’re done, remove them from the oven and give them 10-15 minutes to cool before serving. You can also wait until they’ve fully cooled to room temperature to serve them too 💚

This week has been another crackin week of food 🍳 This week has been another crackin week of food

🍳 I made Gregory some scrambled ackee as part of a cooked breakfast since he'd not tried it before

🥯 Pictures 2-4 were of my bagel sandwich for brunch from @byeandbyeportland it was so tasty and the potatoes it came with here delicious too

🍝 Picture 5 a sausage and beans pasta bake that Gregory made, with a crispy crunchy cheesy breadcrumb topping. Absolutely gorgeous

🍪 Picture 6 a selection of cookies from @natesoatmealcookies oatmeal cookies are my absolute favourite and these were so good! I might have to get more to take home with me

🍛 Pictures 7-10 are from @mirisata vegetable chop suey, stir fried egg noodles and a curry plate

🥪 Pictures 11&12 Subs from @dingersdeli the Oregongrinder and French dip which came with jus, not pictured, they were both really delicious

🍛 Picture 13 was a curry I made with a Payaks sauce jar, which oddly contained sugar but the UK counterpart doesn't. It was still good though, especially with rice and naan

🍽️Pictures 14-18 were Tuesday night dinner. I'd made Cumberland sausage style seitan on Sunday, and fried it off to crisp the outside. I served it with mashed potato and kale, peas and gravy. We had a lil cheesecake for pudding too that I'd made from silken tofu

🍜 Last but by no means least, @obonpdx for lunch which was tantan noodles, in a delightfully cool creamy broth, with mushrooms, umeboshi (this was my first time trying this, I really liked it!) snap peas, pickled cucumber, tofu and hazelnuts

Another fab week I am very grateful 💚
