Easy Vegan Coronation Chicken

Use this as a baked potato topping, sandwich filling, or eat with a green salad for a tasty lunch. For fellow people in the UK; I used the no chick strips from Iceland for this. If that’s not available where you are, pretty much any other mock chicken will work. If mock meats aren’t for you, just swap them for chickpeas

You’ll need;

  1. 160g/5.6oz mock chicken
  2. Two tablespoons of egg free mayonnaise
  3. One teaspoon of curry powder (use mild or medium)
  4. Half a teaspoon of ground cumin
  5. Half a teaspoon of smoked paprika
  6. A quarter of a teaspoon of turmeric
  7. Salt and pepper to taste
  8. Sultanas to taste (optional, I realise some people hate them)
  9. Flaked almonds to taste (again, optional, no one will arrest you if you don’t add them)

Method;

  • Cook the chicken as per the instructions on the packet. Once cooked, set aside to cool
  • Add everything else into a mixing bowl and mix to combine. Stir through the mock chicken and chill in the fridge until you’re ready to use it
  • Serve with salad, topped onto baked potatoes or inside a wrap or sandwich
